Gift of Gluten Free Brownies in a jar

Ingredients

The Gift part

  • 6 tbsp Rice Flour **
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Baking Soda
  • 6 tbsp Almond Flour or Hazelnut Powder
  • 3/4 cup Cocoa Powder (like Valrhona)
  • 1 1/2 tsp Instant Espresso Powder
  • 1 1/2 cups White Sugar
  • 2 tbsp Bittersweet Chocolate Chips
  • 1 cup Chopped Walnuts or Pecans
  • 2 Candy Canes
  • 1L Mason Jar, with Lid
  • **Make your own rice flour, see above link OR If you can find sweet rice flour or glutinous rice flour, use that.

To Finish:

  • 3/4 cup Unsalted Butter
  • 3 Large Eggs
  • 1 /2 tsp Vanilla Extract
  • Flakey Salt like Maldon or Fleur de Sel

Preparation

Combine the rice flour, salt, and baking soda in a bowl. Using a wide mouth funnel, pour the flour mixture into the base of the mason jar. Follow up by layering the ground almond or hazelnut, then the cocoa powder, then the espresso powder, followed by the sugar. Finish the layers with the chocolate and the nuts. Feel free to press down on the nuts to make space so they all fit. Seal and tie the 2 candy canes around. Give the filled Jar as a GIFT with the following instructions:

To prepare and cook the brownies, preheat the oven to 350*.

Melt the butter in a small pan. Empty the brownie mix into a large bowl and pour in the melted butter, along with the 3 eggs and the vanilla. Stir to combine.

Pour the mixture into a 9x13 cake pan. Lightly crush the candy canes, in their wrapping, with the bottom of a heavy pot or a meat mallet. Sprinkle the crushed candy cane over top and place in the oven. Bake for 30-35 minutes. If it's a little fudgy in the middle, even better. Remove and set aside to cool before cutting.
