Ginger Chicken Rice

Ingredients

  • 1 cup/ 250mL Dainty Jasmine Rice
  • 5-6 Chicken Thighs (skinless & boneless), cut or shredded
  • 1 piece of Ginger (approx. 2-inch), chopped
  • 1 cup/ 250mL Chicken Broth (preferably homemade)
  • 1 cup/ 250mL Unsweetened Coconut Milk
  • A pinch of Sea Salt
  • 3 cups/ 750mL Baby Spinach

Preparation

Place the rice, chicken, and ginger in the rice cooker.

Combine the chicken broth, coconut milk, and salt. Pour the combined mixture over ingredients in the rice cooker. Press cook.

Once finished, fluff the rice. Place the spinach on top and close the lid. Allow the spinach to steam for 5 minutes, or until the spinach has wilted.
