Korean Beef with Brown & Wild rice

An easy and flavourful take on Korean style beef for a yummy supper.

Ingredients

  • 2 cups/500mL Dainty Organic Brown & Wild rice blend
  • 2 tbsp Canola Oil
  • 1 lb/450g Lean Ground Beef (or Tofu)
  • 1/4 tsp Fresh ground Ginger, minced
  • 2 cloves of Garlic, minced
  • 1/4 cup/32g Brown Sugar
  • 1/3 cup/80ml Soy Sauce
  • 1 tbsp. Sesame Oil
  • 1/2 tsp. Fish Sauce
  • 1/2 tsp. crushed Red Pepper Flakes
  • Optional Garnish : 1 Green Onion, thinly sliced & Sesame seeds

Preparation

Place the rice in your rice cooker and cook according to the directions on the package.

While the rice is cooking, heat a large sauté pan on medium heat and add the oil. When the oil is hot add the ground beef and cook until it is completely browned. Remove from the heat, drain all but a bit of the liquid in the pan and put the meat in a bowl on the side.

Put the sauté pan back on the heat and add the ginger and garlic. Let it cook for a minute (do not let it get brown).

In another bowl combine the brown sugar, soy sauce, sesame oil, fish sauce and red pepper flakes. Whisk or stir to blend well.

Add the beef and soya sauce mixture to the sauté pan and mix. Let it simmer 3 to 5 minutes to allow the flavours to meld.

Once the rice is cooked, fluff with a fork. Place rice in the center of each place, serve the the beef mixture on top and sprinkle with green onion and sesame seeds.
