Rice Cooker Vegetable Fajita Basmati Rice

Rice cooker or stovetop – Fajita style vegetables with rice, a meal for the whole family – simple as that!

Ingredients

  • 1 cup / 250 mL Dainty Basmati rice
  • 1 1/2 cups / 375mL Water
  • 2 Tbsp / 30g Butter
  • 1 package Fajita seasoning
  • 1 small Onion, peeled & sliced thin
  • 1 small Green Bell Pepper, seeded & sliced thin
  • 1 small Red Bell Pepper, seeded & sliced thin
  • 1/2 cup (100g) Cherry Tomatoes, halved
  • Tortillas, warmed just before serving
  • For Serving: 1-2 limes in quarters
  • Optional: Few dashes of Hot Sauce
  • Salt & Pepper

Preparation

Place the rice, water, butter, fajita seasoning, onion, and peppers into the bowl of your rice cooker. Cook.

When done, fold in the halved cherry tomatoes. Adjust the seasoning with the hot sauce (if using) and the salt & pepper.

Serve in warmed tortillas with lime quarters on the side for extra taste.

OPTION: Add in 1 or 2 cubed boneless chicken breasts to the rice cooker in Step 1 and cook as directed.

STOVETOP DIRECTIONS - Begin by bringing the Step 1 ingredients to a boil on medium high heat. Quickly cover and reduce the heat to a simmer. Cook for 12 minutes and follow the other steps.
