Indonesian Fried Rice Recipe

Indonesian Fried Rice

Ingredients

  • 1 tbsp of Oil
  • 1 tsp Red Chili Paste
  • 2 Garlic Cloves, diced small
  • 1 small Spring Onion, diced
  • 1 Chicken Breast, thinly sliced
  • 1 ½ tbsp of Kecap Manis
  • 3 cups Dainty Jasmine Rice, pre-cooked day prior
  • 2 tbsp Kecap Manis
  • 2 tsp Shrimp paste, omit for vegan/vegetarian options

Garnishes (optional)

  • 4-6 Eggs, fried
  • 2 Green Onions, sliced
  • 2 Tomatoes, cut into wedges
  • 1 Cucumber, cut into chunks
  • Salt and pepper to taste

Preparation

Take pre-cooked rice out of the fridge and set aside.

Heat oil in a large skillet over high heat and add chili paste, garlic and spring onion. Stir occasionally for a minute.

Add thinly sliced chicken and cook until it turns white. Add 1 ½ tbsp of kecap manis and stir for another minute, or until the chicken is fully cooked.

Add the pre-cooked rice, 2 tbsp of kecap manis and shrimp paste, mix and stir for approximately 2 minutes until the sauce is reduced and the rice gets hot and starts to caramelize.

Remove the rice and chicken mixture from the heat and serve in individual bowls with garnishes as desired. The traditional way to serve the recipe is with a fried egg on top!
