Ingredients

Ingredients

  • 4 tbsp Extra Virgin Olive Oil, or Butter
  • 1 medium Onion, peeled and diced
  • ½ tsp ground Turmeric
  • 2 tsp ground Cinnamon
  • 2 Bay Leaves
  • 3 tbsp Tomato Paste
  • 2 cups/500ml Dainty Rajah Basmati Rice blend
  • 2 cups/500ml Green Beans, trimmed and cut into 1 inch slices
  • Salt and Pepper
  • 4 tbsp chopped fresh Cilantro (optional garnish)

Preparation

1

Preheat a medium sauté pan over medium high heat. Add the olive oil or butter. When hot, add the onion and cook for 4-5 minutes, or until wilted. Stir in the turmeric and cinnamon and cook for 1 minute, or until fragrant. Add in the bay leaves and tomato paste. Cook for 1 more minute. Remove from the medium heat and set aside.

2

Place the Dainty Rajah rice into the bowl of a rice cooker and pour over 3 cups of water. Add in the onion mixture from the pan, along with the sliced green beans and a generous seasoning of salt and pepper. Stir together gently. Close the lid and cook.

3

When the rice is cooked, adjust seasoning if needed and serve with a sprinkling of the cilantro, if using.
