Mexican Rice Recipe with Beans

  • 1 x 350g Dainty Mexican Style Rice
  • 1/2 cup (125mL) water
  • 1 can of Black Beans, washed and strained.
  • 2 tbs Olive Oil
  • 1 small onion, diced
  • 1 Poblano Pepper, diced*
  • 1 clove of Garlic, diced
  • Salt and Pepper to taste
  • *You can replace poblano pepper with green pepper to avoid the spiciness.



Take a sauté pan, or pot, and heat over medium heat. Add the rice from the Dainty can, add the contents of the seasoning pouch and 1/2 cup/125mL of water. Break up any clumps of rice and allow it to heat, stirring occasionally. Let it cook for about 4 minutes.


Take another sauté pan and heat over medium heat, add the olive oil. Wait until the oil is warm and add the onion, garlic, and poblano pepper. Sauté for 2 to 3 minutes and then add the black beans. Mix and reduce heat.


Once the onions, beans and peppers mix is cooked and then add it to the rice and mix. Serve.
