Rice Cooker Coconut, Lime, Cilantro rice with Chicken & Shrimp

Super simple cilantro rice recipe in a rice cooker with chicken and shrimp ! A delicious rice cooker meal !

Rice cooker Coconut, lime & cilantro rice


  • 2 cups/500 mL Dainty Basmati rice
  • 1 1/2 cups/375 mL Coconut milk (regular or light)
  • 1 cup/250mL Vegetable (or chicken broth)
  • 3/4 cup/190mL flaked coconut (sweetened or unsweetened)
  • 1 tbsp/15mL minced fresh ginger
  • Zest of 1 lime
  • Juice of 1 lime
  • 2 chicken breasts, cut into strips
  • 12 -18 large shelled and deveined cooked shrimps
  • 1 cup/250mL fresh chopped cilantro



Add the following to your rice cooker and give it a gentle stir: - Basmati rice - Coconut milk - Vegetable broth - 1/4 cup/60mL of the flaked coconut (keep the rest aside) - Minced fresh ginger - 1/2 the lime zest


Add the chicken strips spread out on top of the rice mixture and turn your rice cooker on.


Get out a small frying pan and on medium heat toast the remaining coconut until lightly browned, set aside to cool.


When the rice cooker has switched to warm, gently fold in the lime juice, remaining lime zest and 3/4 of the cilantro, place the shrimp on top to warm and replace the cover for 5-10 minutes.


Serve, placing a couple of shrimp on top of each plate and garnish with remaining coriander and toasted coconut.
