Rice Cooker Coconut, Lime, Cilantro rice with Chicken & Shrimp

Super simple cilantro rice recipe in a rice cooker with chicken and shrimp ! A delicious rice cooker meal !

Ingredients











Preparation

Step 1

Add the following to your rice cooker and give it a gentle stir:

– Basmati rice

– Coconut milk

– Vegetable broth

– 1/4 cup/60mL of the flaked coconut (keep the rest aside)

– Minced fresh ginger

– 1/2 the lime zest

Step 2

Add the chicken strips spread out on top of the rice mixture and turn your rice cooker on.

Step 3

Get out a small frying pan and on medium heat toast the remaining coconut until lightly browned, set aside to cool.

Step 4

When the rice cooker has switched to warm, gently fold in the lime juice, remaining lime zest and 3/4 of the cilantro, place the shrimp on top to warm and replace the cover for 5-10 minutes.

Step 5

Serve, placing a couple of shrimp on top of each plate and garnish with remaining coriander and toasted coconut.
