Cook the Dainty Kimora Rice according to package instructions. When done, allow to rest for 10 minutes.
Tip the rice into a large mixing bowl. Using a large spoon, drizzle in 2 tbsp of the seasoned rice vinegar and fold the rice until the vinegar is absorbed. Repeat with the remaining 2 tbsp rice vinegar. It may seem a little wet. Cover the bowl with a tea towel and set aside to rest. Taste the rice. If it needs a bit more vinegar, add in 1-2 tbsp more.
Meanwhile, place the diced tuna in a medium mixing bowl and stir in the soy sauce and hoisin sauce. Once combined, cover and place in the fridge for 5 minutes to marinate.
In a small mixing bowl, whisk together the mayo, sriracha and lemon juice. Set aside.
To serve, spoon some of the seasoned rice in a large bowl, Scatter around some of the tuna, cucumber, carrot, radish, mango and avocado. Drizzle some of the spicy mayo on top and garnish with a sprinkling of the toasted sesame seeds.
