A little nostalgia in every bite…
Place the Dainty Jasmine Rice the medium heavy bottom pot. Add in the canned tomatoes, chicken stock, onion, chili powder, salt, cumin, and garlic powder.
Place the pot on high heat and bring to a simmer. Immedietly reduce the heat to low, cover, and allow to cook for 15 minutes. Turn off the heat, very quickly pour in the frozen peas and cover again. Allow the rice to rest for 10 minutes. Remove the lid, gently fluff the rice and adjust seasoning with more salt if needed.
Garnish with the chopped parsley and serve with hot sauce of choice and lime wedges on the side.
Traditionally served with roast chicken, but great served with shrimp, tacos or burritos.
