Horchata is a delicious Mexican rice milk drink. Jonathan’s simple recipe with a coconut twist is a refreshing mocktail!
Stir the boiling water, rice, and cinnamon in a bowl. Cover and let sit on the counter overnight.
The next day, transfer the mixture to a blender. Add the coconut milk and blend until smooth, about 3-4 minutes. Strain into a pitcher through cheesecloth or a very fine strainer. Cover and chill.
Over medium-low heat, warm the coconut milk in a small pot with the sugar and salt until the sugar dissolves. Cool and stir into the rice mixture. Adjust consistency with more coconut water if necessary. Serve over ice.
