Decadent doughnut pancakes. Great for weekend breakfast, brunch, or after-school snacks.
In a medium size bowl whisk together the pancake mix, egg, milk and 2 tbsp of oil until combined.
Heat a frying pan over medium-low heat and add 1/4 cup (60mL) of oil.
Scoop 2 tbsp batter onto the pan. Cook 2-3 minutes, flip and cook another 2 minutes.
In another bowl, mix sugar and cinnamon. Coat doughnut pancake with mix by rolling in the cinnamon sugar. Serve warm.
