This simple and elegant Chocolate Cake can be dressed up or left plain, either way it’s a scrumptuous cake to share.
Preheat oven to 350F (180C). Grease an 8″ round baking pan and line with parchment paper.
In a large bowl, blend all the ingredients together until smooth and well combined. Pour into baking pan.
Bake for 40-45 minutes until a toothpick comes out clean.
Let cool for 15 minutes before removing from the pan, then let it cool completely on a wire rack.
CHOCOLATE GANACHE : Add to a pyrex measuring cup 2/3 cup (160mL) 35% cream, 2 tbsp butter, and 1 cup (250mL) semi-sweet chocolate chips. Microwave 1-2 min, then stir until melted. Let cool for 20 minutes and pour over top of cooled cake.
You can also make 12 Chocolate cupcakes with this mix! Add the same ingredients as for the cake.ย Equally fill 12 cupcakes liners using an ice cream scoop and bake at 350F/175C for 15-17 minutes until a toothpick comes out clean. The ganache makes a great topping for the cupcakes as well.
