Green Pea, Ham & Brown Rice Fritters

These little fritters are loved by kids and a great way to disguise those greens! They always stand out amongst the hors d’oeuvres at a dinner or garden party. The recipe makes 6 medium sized fritters.

Ingredients

  • ¾ cup/ 190mL Dainty Brown Rice
  • 1 ½ cups/ 375mL of Water
  • 3 large eggs
  • 1 cup/ 250mL Frozen Peas, thawed
  • 3 tbsp/ 45mL Fresh Mint, chopped
  • ¼ cup/ 65mL Green Onion, chopped
  • 5 slices of Ham, diced
  • ½ cup/ 125mL Parmesan Cheese, grated
  • 1 tsp/ 5mL Salt
  • ½ tsp/ 5mL Pepper
  • ¼ cup/ 60mL Vegetable Oil

Preparation

Cook the Dainty Brown rice according to the package but using only 1 ½ cups (375mL) of water. When done, spread onto a baking sheet and allow to cool for 20 minutes.

Once cooled, place the rice in a large mixing bowl, along with everything else, except the oil. Mix gently.

Heat a non-stick pan over a medium-high heat. Add the oil. When hot, measure each fritter to 2 tbsp and place in the pan. It will be loose, so drop it gently into the pan. Reduce heat to medium and cook for 4-5 minutes, or until golden. Do not attempt to move them before 4 minutes. Give them time to set. Gently flip and cook for an additional 3 minutes. Drain on a paper towel and repeat.

Serve warm – great with tzatziki, salsa, or hot sauce!
