Matcha and Lime Cake

Preparation

Step 1

Preheat the oven to 350 f (180 C) and line an 8-9.5 inch cake tin with parchment paper.

Step 2

Pour the Vanilla cupcake mix into a large bowl. Add the matcha powder and blend.

Step 3

Add the eggs, milk, oil and lime zest and stir to combine really well.

Step 4

Pour the mix into your prepared cake pan and place in the oven. Bake for 30-35 minutes, until a toothpick comes out clean.

Step 5

Let the cake cool completely before adding the icing.

Step 6

For the icing : Using an electric mixer beat the cream cheese. Then add the icing sugar along with the vanilla extract and the cream and beat until it’s fluffy. You can place this in the refrigerator until ready to spread on your cake for serving. Sprinkle with fresh lime zest!
