You can omit the booze, but don’t these sound fun?
Prepare and bake the Dainty Vanilla Cupcakes according to package instructions. Allow to cool completely.
While the cupcakes are cooling, heat a medium skillet over medium high heat. Add in the sugar, orange zest and juice, vanilla, and the cherries. Cook, while stirring, until the sugar dissolves and the cherry juices release and reduce a bit.
Remove the pan from the heat and add the brandy, bourbon, or rye. Return to the heat, and use a match to ignite. Stir and baste the cherries with a spoon and cook until the flame dies. Continue to simmer until the sauce thickens, about 2-3 minutes.
Remove and set aside to cool
Place the whipping cream, buttermilk, and icing sugar in a bowl and whisk until it forms soft peaks.
Using a paring knife, cut a shallow well in the center top of the cooled cupcakes. Spoon some of the cooled cherry mixture in and top with a dollop of the buttermilk whipped cream. Serve immediately.
These are great for a summer get together.
