A simple take on a classic but this one’s gluten free, and by the way NO-ONE would know!
Preheat oven to 350*F/177C and line a loaf pan with parchment paper.
Place the old mushy bananas into a large mixing bowl. Add in the vegetable oil, dark brown sugar, eggs, and vanilla. Mix and stir until it comes together.
In a separate small bowl, stir together the Dainty All-Purpose Gluten Free Flour, baking powder, and cardamom. Add to the wet ingredients, and with a spatula, stir together until it forms a batter.
Pour the prepared batter into the lined loaf pan. Sprinkle the chocolate chips over the top. Peel the ripe banana, slice lengthwise, and place on top, cut-side up.
Place in the oven and bake for 50-60 minutes, or until a skewer is placed in and comes out clean. Remove and allow to cool before slicing.
Did you know that over-ripe bananas are incredibly sweet so apart from a way to use them up it alos means your recipe needs less sugar!
