This Chicken side-dish is a great product to have in your pantry for quick and simple meal solutions.
Heat a medium pot over medium high heat. When hot, add the olive oil and onion. Sauté for 2 minutes until softened slightly.
Cut open and empty in the 2 packets of Dainty Rice and sauté with the onion for 1 minute. Add in the water and seasoning packet and stir to combine. Cover and allow to simmer for 3-5 minutes.
Remove the lid, stir in the grated parmesan cheese, pepper, and baby spinach. Stir to wilt the spinach slightly. If it’s a little dry, add in 2-4 tbsp more water to be a little more saucy and loose. Serve hot.
You could also substitute frozen green peas for the spinach and give it a few extra minutes.
