Hasweh Rice

A simple meal inspired by Arabic cuisine, perfect for a Ramadan gathering!

Ingredients

  • 2 cups/500mL Dainty Basmati Rice
  • 3 cups/750mL Water or Vegetable stock
  • 2 tbsp Vegetable Oil
  • 2 small Onions, finely diced
  • 500g Lean Ground Beef (Halal preferably)
  • 2 cups/500mL Frozen Peas & Carrots
  • 2 tsp ground Allspice
  • 1 tsp ground Cinnamon
  • Salt & Pepper
  • 1/2 cup/125mL slivered Almonds, toasted
  • 1/4 cup/65mL Raisins
  • A fistful of fresh Parsley, chopped (for Garnish)

Preparation

Cook your rice with the water or vegetable stick,in your rice cooker or on stovetop.

While the rice is cooking, place a large frying pan on medium heat. Add the vegetable oil and minced onion and cook about 5 minutes until the onion is translucent. Add the ground beef to the pan with the onion and cook through, 7 to 10 minutes.

Add the allspice and cinnamon, salt and pepper along with the frozen vegetables. Stir to combine and continue to cook for another 5 minutes.

Add the cooked rice, combine. Garnish with the sliverred almonds, raisins and chopped parsley and serve.
