Wild Rice with Rosemary and Roasted Squash

Preparation

Step 1

Preheat oven to 450*F/232C and line a baking sheet with Parchment paper.

Step 2

In a large mixing bowl, toss together the diced squash, 1 clove of smashed garlic, 2 sprigs of rosemary, enough olive oil to lightly coat, and season generously with salt and pepper. Lay out on the lined baking sheet and place in the oven. Allow to roast for 30-35 minutes, or until caramelized around the edges.

Step 3

Meanwhile, cook the Dainty Borealis rice blend according to package instructions. Add in the remaining 1 clove of garlic and rosemary.

Step 4

When the squash is done, remove from the oven.

Step 5

To serve, gently mix the roasted squash into the rice. Adjust seasoning with salt and pepper. Por the rice onto a serving platter and garnish with the chopped parsley on top. Serve warm.
