Preparation

Step 1

Squeeze, cut open and then pour the Dainty Side Dish rice packet into a medium sized pot and place on medium heat. Add in the Mexican seasoning packet, along with 1/3 cup water. Cover and bring to a simmer and cook for 4 minutes. Remove from the heat.

Step 2

Lay out the large flour tortilla and spoon some of the rice in the middle. Top with some shredded chicken, lettuce, cheese and salsa. Roll, sealing the ends, and serve.

Note from the chef

How easy was that!  You could swap out the chicken for ground beef or porc, make it your own.
