Baked French Onion Rice

A scrumptious side dish to serve for a party or to bring to a potluck, make it vegetarian by using vegetable broth.

Ingredients







Preparation

Step 1

Heat a large pot over high heat. Add in ¼ cup of the butter. When melted, add in the sliced onions. Cook over high heat, stirring regularly, until the onions start to soften slightly.

Step 2

Reduce the heat to medium and allow the onion to cook down and brown, about 30 minutes. The onions should have a caramel color. Set aside.

Step 3

Preheat oven to 425*F / 200*C

Step 4

In a casserole dish, add the Dainty Borealis Rice Blend and the beef stock. Dot the remaining butter over the top. Cover with foil and place in the oven. Cook for 25 minutes.

Step 5

Remove the dish from the oven, uncover, and spread the caramelized onions over the top. Place back in the oven, uncovered, and cook for another 25 minutes, or until the top becomes golden and maybe a little crispy.

Step 6

Serve garnished with the chopped parsley.

Note from the chef

Use the foil matte side up to absorb maximum heat.
