Cook the Dainty Brown Rice according to package directions.
Preheat the oven to 400°F / 205°C.
When the rice is done, put it into a mixing bowl and combine it with the beaten eggs, olive oil, tomato sauce, 4 tbsp of the Pecorino or Parmesan, frozen peas, mozzarella, garlic powder, and season generously with salt and pepper.
Pour the rice mixture into a large baking dish and bake in the oven for 25 minutes.
Meanwhile, in a small bowl, mix together the breadcrumbs, olive oil, and the remaining 2 tbsp of Pecorino or Parmesan cheese.
Remove the rice from the oven and sprinkle the breadcrumb mixture over the top. Place it back in the oven for 10 minutes, or until the breadcrumbs are toasted and crispy.
Remove from the oven and serve it hot.
