Gluten Free Banana Bread

Inspired by Dainty Chefs

Oven ready in 10 minutes, this makes for a great snack or a lunchbox item.

Ingredients

  • 1 package of Dainty Gluten Free Cupcake mix 370g
  • 2 medium Eggs
  • 1/4 cup/65mL Vegetable Oil
  • 2 over-ripe Bananas
  • 1/4 tsp ground Cinnamon
  • 1/4 cup/36g chopped Walnuts (optional)
  • Sidenote: Banana bread is always even better with chocolate chips!

Preparation

Preheat oven to 350F / 175C. Line a loaf pan with parchment paper.

Pour the Dainty Gluten Free Cupcake Mix into a large bowl. Add remaining ingredients and blend using stand mixer until combined and smooth.

Bake for 45 minutes, or until golden brown, and a toothpick comes out clean.

Cool for 5 minutes in the pan before placing on a wire rack to cool for another 30 minutes.
