Gluten Free Cinnamon Swirl Cake

Ingredients

  • 1 package Dainty GF Cupcake mix
  • 2 large Eggs
  • 1/2 cup/125mL Milk
  • 1/4 cup/60mL Vegetable Oil

The Cinnamon Swirl

  • 1 tsp Cinnamon
  • 2 tbsp Brown Sugar
  • 2 tbsp vegetable Oil or melted Butter

Preparation

Preheat the oven to 350°F. Grease a 9" square pan and line with parchment paper.

In a large bowl, blend the GF Vanilla Cupcake Mix with eggs, milk, and vegetable oil with a whisk, until combined. Let sit for 5 minutes.

In a separate bowl, mix cinnamon, brown sugar, and oil (or butter).

Pour the abtter into the 9" square baking pan. Pour the cinnamon mixture on top. Gently swirl the cinnamon mixture into the batter using a knife. Do not over-swirl, so as NOT to mix both mixtures.

Bake for 35-40 minutes until golden brown and a toothpick comes out clean.

Cool for 15 minutes before removing from the pan, then let it cool completely on a wire rack.
