An Arbour family classic recipe, loved by generations from the Beauce
Preheat the oven to 400F/205C and line a baking sheet, or two, with parchment.
In a bowl cream together the butter, brown sugar and the egg with a beater. Set aside.
In a bowl or measuring cup add the salt, baking soda and vanilla to the boiling water. Mix well.
To the creamed butter slowly add the flour and alternate with the hot water mixture.
Make small balls of the dough with a large melon scoop and roll the balls in the extra brown sugar. Place on a baking sheet.
Using your thumb press a round into the center of each ball and add your jam choice. Bake for 10-15 minutes.
