Leamington, just South of Dainty’s home in Windsor, is famous for its tomatoes. This yummy recipe is a local favourite in Windsor.
Place the rice in a rice cooker with the diced tomatoes and stock. Cook.
Meanwhile, heat up a sauté pan over medium high heat. Add the olive oil. When hot, add the onion and garlic. Sauté for 5 minutes or until soft.
When the rice is finished cooking, fold in the sautéed onion, garlic and chopped cilantro. Adjust salt and pepper to taste.
Note: If you find the rice slightly wet, it's ok, it's supposed to be like that. Great served with Lake St.Clair perch, or any fish, even sautéed shrimp!
