No-Bake Chocolate Crispy Rice Squares

A crispy rice treat for chocolate lovers.

  • 2 cups/500mL Good Quality Chocolate Chips (70% Cocoa preferred)
  • 1 cup/250mL Crunchy Peanut Butter
  • 1/2 cup/125mL Unsalted Butter
  • 1 tsp Kosher Salt
  • 1 cup/250mL Crispy Rice Cereal
  • 2 cups/500mL Mini Marshmallows
  • 1/2 cup/125mL Unsweetened Shredded Coconut
  • 1/2 cup/125mL Raisins (optional)



Lightly spray a 9-inch square pan with oil spray.


Place a medium pot with 2 cups water over medium heat. Bring to a very gentle simmer. In a heatproof bowl that fits over the pot, making sure the bottom of the bowl does not touch the water, combine the chocolate, peanut butter, butter, and salt. Melt fully, stirring occasionally, until smooth. Remove and allow to cool for 5 minutes.


Add in the rice cereal, marshmallows, coconut, and raisins if using. Using a rubber spatula, stir to combine. Scrape into the prepared pan and spread out evenly. Place in the fridge to chill completely, at least 4 hours.


When set, cut into 16 pieces and enjoy. Store in an airtight container in the freezer.
