Hearty & healthy, this is a great (and easy!) soup to keep everyone going.
Preheat a large pot over medium high heat. Add in the olive oil. When the oil is loose and shimmering, add the onion, carrot, and cumin. Sauté for 5-6 minutes, or until the onions are softened, but not browned. Add in the tomato paste, stir to combine, and sauté for 1-2 minutes. Add in the garlic and cook for 1 minute.
Add in the uncooked Dainty Royal Rice stir to combine. Pour in the vegetable or chicken stock and stir to combine. Bring up to a simmer and then reduce to medium or medium-low to allow a gently bubble. Cook until the rice is cooked through, about 10 minutes. Stir occasionally.
When the rice is tender, stir in the drained beans, chipotle if using, and season with salt and pepper to taste.
To serve, spoon some soup into serving bowls and garnish with the cilantro or parsley and small spoonful of the cheese. Serve hot.
A great soup you can even double the recipe and keep some in the fridge for another meal.
