Rice cooker Brown rice and Beans

Brown rice and beans 2019

Ingredients

  • 1 tbsp /15mL Olive oil
  • 1 small Onion, diced
  • 1 clove of Garlic, minced
  • 1 cup/250mL Dainty Brown rice
  • 2 cups/500mL low sodium Vegetable broth
  • 1 tsp. Ground Cumin
  • 1 can Black beans, drained and rinsed
  • Garnish: 2 limes, quartered & Fresh Cilantro, chopped

Preparation

In a small frying pan on medium-high heat, heat the oil. Add the onion and garlic and sauté for 4 minutes.

To your rice cooker add the brown rice, vegetable broth, cumin and sautéed onion and garlic.

When your cooker turns to OFF, fluff the rice and gently incorporate the black beans.

Replace the cover on the rice cooker and let sit for 5 minutes to allow the beans to warm.

Serve garnished with lime wedges and chopped fresh cilantro. Optional: add a dash of hot sauce!

IDEA: To use as a Burrito filling add: Shredded Lettuce, Diced Tomato, Salsa, Corn niblets, Guacamole, Shredded Cheese
