Preparation

Step 1

In a small frying pan on medium-high heat, heat the oil. Add the onion and garlic and sauté for 4 minutes.

Step 2

To your rice cooker add the brown rice, vegetable broth, cumin and sautéed onion and garlic.

Step 3

When your cooker turns to OFF, fluff the rice and gently incorporate the black beans.

Step 4

Replace the cover on the rice cooker and let sit for 5 minutes to allow the beans to warm.

Step 5

Serve garnished with lime wedges and chopped fresh cilantro. Optional: add a dash of hot sauce!

Step 6

IDEA:

To use as a Burrito filling add: Shredded Lettuce, Diced Tomato, Salsa, Corn niblets, Guacamole, Shredded Cheese
