Great for a summer BBQ side, and loved by kids also!
Place the Dainty Basmati Rice into the bowl of a rice cooker. Add in 2 1/3 cup of cold water, along with the tomato paste. Stir in the tomato paste to break up the clumps. Cook the rice.
When done, pour the rice onto a large baking sheet to cool. About 20 minutes.
Meanwhile, Whisk together the mayo, sriracha, lemon juice, and salt to taste.
Place the cooled rice into a large mixing bowl and toss with the cabbage. Place onto a large serving platter and scatter the remaining vegetables and almonds over top.
Drizzle the spicy mayo over top and serve.
Make an additional batch of dressing so people can serve themselves a little extra.
