Organic Brown & Wild rice Holiday Stuffing

A flavourful quick rice stuffing to accompany your turkey, let your rice cooker do half the work!

Rice cooker Holiday Stuffing


  • 1 1/2 cups (375mL) Dainty Organic Brown & Wild rice (or Dainty's Long & Wild rice blend)
  • 3 cups (750mL) low-sodium Chicken or Vegetable stock
  • 6 tbsp (90mL) Unsalted Butter
  • 1 small Spanish Onion, diced
  • 1 ½ cups (375mL) Crimini Mushrooms, trimmed & sliced
  • 3 tbsp. (45mL) fresh Thyme leaves, chopped
  • 2 tbsp. (30mL) fresh Sage leaves, chopped
  • 1 Apple or Pear, cored & diced
  • ½ cup (125mL) Italian Parsley, chopped
  • Salt & Pepper, to taste



Place the rice, stock and4 tbsp. (60mL) butter in the bowl of your rice cooker and cook.


Meanwhile heat a large sauté pan on medium-high heat, melt remaining butter. Add the onion and cook for 4-5 minutes, until translucent.


Add the mushrooms and cook until tender, 4-5 mins.


Remove form the heat, add the thyme, sage, apple (or pear) and parsley. Stir to combine and season with salt & pepper.


When rice is finished cooking fold the onion/mushroom mixture into the rice.


Serve as a side or cool off and use to stuff something
