Quick Chinese fried rice meal

Step 1

Using a large sauté pan, or wok, on medium heat prepare the Dainty Chinese style rice according to package directions and add the 2 tsp of sesame oil. Once cooked remove from sauté pan to a large bowl, or 4 smaller bowls.

Step 2

Place the sauté pan back on medium-high heat, add the olive oil and pour in the frozen Asian vegetable mix. Sauté for 3-5 minutes, until the vegetables have thawed. Add the cashews, combine and heat through and season with salt and pepper.

Step 3

Pour the vegetable mixture over the rice, and squeeze juice of one lime over top.

Step 4

Return the sauté pan to medium-high and quickly fry the 4 eggs. (You may need a bit more olive oil). Once cooked place the eggs separately on top of the vegetable and rice bowl, or one on top in each bowl.

Step 5

Drizzle with a little chili oil and garnish with chopped cilantro, and the rest of the lime in quarters. Serve with soya sauce.

The seasoning in the Chinese style cooked rice bumps the flavour of this simple dish.
