In a large bowl, mix together the olive oil, lemon zest and juice, garlic cloves, ground coriander seed, paprika, ground cumin, ground turmeric, ground cinnamon, and ground ginger. Season with salt and black pepper to taste and enjoy your shawarma mixing bowl.
Add in the chicken thighs and toss to combine, ensuring the chicken is well-coated with the marinade. Allow to marinate for at least 2 hours or up to the day before for deeper and amazing shawarma flavours.
Step 2
Prepare the Rice:
Place half the marinated chicken thighs into the base of a rice cooker.
Pour in the Dainty Conditioned Rice, and top with the remaining marinated chicken. Pour in the chicken stock or water.
Cook until done, allowing the rice to absorb all the delicious flavours from the marinated chicken.
Step 3
Finish and Serve:
Once the rice is cooked, stir to mix the rice and chicken thoroughly.
Adjust seasoning with additional salt and black pepper if necessary.
Garnish with chopped fresh parsley or cilantro and serve with a generous dollop of tzatziki or plain yogurt on the side.
