A terrific side dish, aromatic rice with a hit of fresh mango salsa.Â

Place the jasmine rice into the bowl of a rice cooker. Wash the rice 2-3 times, or until the water runs clear. Add in the coconut milk, water, and season with salt. Cover and cook.Â
While the rice is cooking in a medium mixing bowl, combine the diced mango, ginger, red bell pepper, cilantro, red onion, avocado, and juice of 2 limes. Gently toss together with a spoon. Season with salt and pepper. Taste and adjust seasoning with more lime juice and salt if needed.Â
When the rice is done, spoon some of the salsa on top and serve.Â

This pairs beautifully with anything from the BBQ like grilled salmon, chicken, steak, or grilled vegetables.Â
