I’ve laid out a ‘shawarma spice mix’ recipe here but you can cheat by all means and use a pre-mixed version, I won’t tell 🙂
To prepare the spice mix, place all ground spices in a bowl and stir to combine.
Heat a medium pot over high heat. When hot, add the oil and onion. Sauté for 3 minutes, or until just softened. Add 2-3 tbsp of the spice mix and sauté for 1 minute, or until aromatic. Add in the rice and stir to combine. Pour over the chicken stock, bring to a simmer, and then cover and reduce the heat to low.
Allow to cook for 15 minutes, turn off the heat, and rest for 10 minutes.
Meanwhile, stir together the yogurt, garlic, and salt and pepper in a small bowl.
Serve with a sprinkling of the chopped parsley or cilantro and a dollop of the yogurt.
This is great served with 450gr od cooked ground beef seasoned with the remaining shawarma spice mix.
