Quick Mexican Cheesy Bean and Rice Skillet

Preparation

Step 1

Heat a deep skillet over medium high heat. When hot, add in the olive oil and garlic and sauté until onions soften, about 4 minutes.

Step 2

Add in the diced red or yellow pepper and the contents of the Dainty Mexican Style side dish (rice and seasoning packet). Stir together to combine.

Step 3

Add in 2/3 cup of water, reduce the heat to medium, and stir together.

Step 4

Bring to a simmer and allow to cook for 4 minutes.

Step 5

When done, serve the rice in the skillet. Garnish with the shredded cheese first, followed by the lettuce, dollops of sour cream and pico de gallo, and serve with lime wedges on the side.

Note from the chef

Add in 250gr of ground beef while sautéing the onions and garlic. Or fold in leftover shredded chicken before garnishing the dish.

You can also add more garnishes as desired – such as jarred jalapenos, hot sauce etc.. make it your own.
