‘Spanakopita’ Brown rice

A healthy side or base for grilled fish or chicken, great for any time of year! Also makes a delicious make-ahead lunch item.

Ingredients

  • 1 cup/250mL Dainty Parboiled Brown Rice
  • 1/4 cup/65mL Vegetable Oil
  • 1 small Onion, peeled and sliced thin
  • 2 Garlic cloves
  • 5 cups packed or 300g Spinach, chopped rough
  • 2 tbsp Unsalted Butter
  • 2 Scallions, trimmed and sliced thin
  • 1/4 cup fresh Dill, chopped
  • Salt & Pepper
  • 1/2 cup/125mL Greek or Bulgarian Feta Cheese, crumbled

Preparation

Cook the Dainty Parboiled Brown Rice according to package instructions.

Heat a large sauté pan over high heat. When hot, add the oil and sliced onion. Sauté for 5 minutes, or until slightly caramelized. Add the garlic and cook for another minute. Add in the spinach and cook until wilted, about 3 minutes. Remove from the heat and set aside.

When the rice is done, stir in the spinach mixture, sliced scallions, dill, season with salt and pepper, and mix all together with the butter.

When ready to serve, Pour onto a serving platter and sprinkle with the feta.
