A colourful and tatsy salad – perfect as a side or a meal !
Place the Dainty Basmati rice in the bowl of a rice cooker. Cover with 2 cups of cold water, the smashed garlic, and cumin seeds. Season with salt and pepper and cook. When done spread the hot rice on a baking sheet to steam dry and cool.
Meanwhile, in a small bowl, combine the lime zest, juice, honey and olive oil. Stir to combine.
Once the rice is cooled, place ina large mixing bowl, along with the cherry tomaties, diced bell pepper, jalapeño, avocado and cilantro (keep some cilantro to arnish). Add int he dressing and stir to combine. Season with salt and pepper, and more lime juice if needed.
To serve spread onto a platter, or place in a salad bowl and sprinkle with cilantro.
This is a great side salad for a BBQ or add a protein like chicken or shrimp and serve as a meal.
