Preparation

Step 1

Cook the Dainty Jasmine Rice according to package instructions. When done, allow to rest until needed.

Step 2

Preheat oven to 450*F/230 C. Line a baking sheet with parchment paper. Place the salmon filets on top, season with salt and pepper, and place in the oven. Cook for 15 minutes, or until cooked through.

Step 3

Meanwhile, bring a medium pot of salted water to a boil. Add in the sugar snap peas and cook for 1 minute. Drain and set aside.

Step 4

In a small mixing bowl, whisk together the chile crisp, rice vinegar, and soy sauce.

Step 5

To serve, spoon some cooked Dainty Jasmine Rice into the base of a bowl, lay 1 salmon filet on top, fan out 1 avocado half, and some of the sugar snap peas. Pour some of the dressing over top and garnish with some cilantro.

Note from the chef

Chile crisp is a condiment which is oil based and contains amazing crunchy bits of onion, shallot, garlic and chili peppers. Each recipe is individual so find your favourite, it brings great flavour to all kinds of dishes and really enhances this salmon bowl recipe.
