Lunar New Year Gluten Free Almond Cookies

Lunar New Year Almond cookies

Ingredients

  • 1 cup/250 mL Almond Meal or Flour
  • 1 1/3 cup/330 mL White Rice Flour *
  • 1/2 tsp Baking Soda
  • 1/3 cup/85 mL Maple Syrup
  • 1 Egg
  • 1 tsp Almond Extract
  • 8 whole Blanched Almonds
  • *Did you know that you can make your own gluten-free flour for battering or baking needs by pulsing and grinding dry rice in a blender?

Preparation

Preheat oven to 350F / 175C

In a medium sized mixing bowl, stir together the almond meal, rice flour, and baking powder. Add in the maple syrup, whole egg, and salt. Mix with a spatula until fully combined.

Line a baking sheet with parchment. Using a 2 tbsp scoop, scoop 8 balls 9about the size of gold balls) onto the baking sheet. Flatten them out slightly using the bottom of a glass. Press in 1 whole almond into the center of each cookie.

In a small mixing bowl, whisk together the yolk and 1 tbsp water until smooth. Brush the each cookie with the egg wash and place in the oven. Bake for 14-16 minutes, or until the edges are slightly browned.

Remove from the oven and allow to rest for 10 minutes.
