Rice Cooker Vegetable Fajita Basmati Rice

Rice cooker or stovetop – Fajita style vegetables with rice, a meal for the whole family – simple as that!

Preparation

Step 1

Place the rice, water, butter, fajita seasoning, onion, and peppers into the bowl of your rice cooker. Cook.

Step 2

When done, fold in the halved cherry tomatoes. Adjust the seasoning with the hot sauce (if using) and the salt & pepper.

Step 3

Serve in warmed tortillas with lime quarters on the side for extra taste.

Step 4

OPTION: Add in 1 or 2 cubed boneless chicken breasts to the rice cooker in Step 1 and cook as directed.

Step 5

STOVETOP DIRECTIONS – Begin by bringing the Step 1 ingredients to a boil on medium high heat. Quickly cover and reduce the heat to a simmer. Cook for 12 minutes and follow the other steps.
