Baked Rice Meal

A rice bake ! A satisfying meal that is so simple to make. Make it your own by adjusting ingredients.

  • 1 1/2 cups/375mL Dainty Conditioned rice
  • 3 tbsp Olive Oil
  • 1 large Onion, diced
  • 2 garlic cloves, finely chopped
  • 3-4 rashers of bacon, sliced into 1 inch pieces
  • 1 lb/500g of ground meat of choice (beef. porc, or lamb)
  • 3 large Italian Tomatoes diced
  • 2 tbsp Tomato paste
  • 2 cups/500ml Chicken broth
  • 1 1/2 tsp Salt
  • 1 tsp dried Oregano
  • 1 tsp dried Mint
  • 1 pinch Saffron (optional)
  • 2 Tbsp grated Parmesan
  • 3 Tbsp Breadcrumbs



Cook your rice according to package directions in your rice cooker or on stovetop for just 3/4 of its cook time - 15 minutes. After 15 minutes drain your rice under cold water to cool the rice down and set aside.


Heat a large frying pan (that will be able to go in the oven as well) on medium heat. Add the olive oil and once hot add the onion, garlic and bacon and sauté until the onion is soft.


Add the ground meat and cook until browned.


Next, add the diced tomatoes, tomato paste, Chicken broth, salt, dried herbs and saffron if using. Cover and let simmer for 10 minutes and then turn off the heat.


Preheat your oven to 375F /190C.


Add your 3/4 cooked rice to your large frying pan with the meat and tomato mixture and stir to combine. Sprinkle with parmesan and breadcrumbs and bake for 20 minutes. Remove form the oven and serve!
