Burrito Party

As the title would suggest, this meal is a party in your mouth!

Ingredients

  • 1 cup/ 250mL Dainty Conditioned Rice
  • 1 tsp/ 5mL Olive Oil
  • 1 Small Onion, diced
  • 1 clove Garlic, finely chopped
  • 2 cups/ 500mL Low Sodium Vegetable Broth
  • 1 tsp/ 5mL Ground Cumin
  • 1 can Black Beans, drained & rinsed
  • 6 Whole Wheat Tortillas

Options for added filling

  • Shredded Lettuce
  • Diced Tomato
  • Grated Cheese
  • Salsa
  • Guacamole
  • Cooked Ground Beef
  • Shredded Leftover Chicken

Preparation

In a cooking pot over a medium-high, heat the oil. Add the onion and garlic, sauté for 4 minutes. Add the Dainty Conditioned rice and sauté for an additional 2 minutes.

Add the vegetable broth and bring to a boil, then cover and lower the heat to cook for 20 minutes (* Cooking times may vary for different rice).

Add the spices and black beans.

Place the tortilla flat on a plate. Spoon ¼ cup (60mL) of the rice mixture in the base. Mix and match the other filling options, roll, and enjoy!
