A flavourful twist on a delicious rice classic.
Heat oil on high in a frying pan.
Fry the garlic, shallots and ginger for 30 seconds
Add in the rice and stir for about 2 minutes, or until hot.
Make a small hole in the center of the pan and break in the eggs. Mix until cooked, then mix in with the rice. Add soy sauce and sugar. Stir for an extra minute. Adjust seasoning if needed.
Serve hot.
