Rice Cooker Taco Rice & Beans

Just TWO steps for your taco rice recipe! Makes a great vegetarian base for soft tacos, add your cheese, lettuce and salsa.

Rice cooker Taco rice and Beans

Ingredients

  • 1 1/2 cups / 375mL Dainty ROYAL rice
  • 2 cups / 500mL water, or broth
  • 1 package of Taco seasoning
  • 1 tbsp. Olive oil or butter
  • 1 can of red kidney beans, drained & rinsed
  • 2 green onions, trimmed and sliced thin for garnish

Preparation

Place all the ingredients (except the green onions) in the rice cooker. Cook.

When done, fluff the rice with a fork and garnish with the sliced green onions. Serve

Optional: For added flavour you can also add diced onion or garlic to the rice cooker before cooking.
