This can be a meal or a side, packed with protein and great for an end of summer / fall meal.
Preheat oven to 375F/190C. Wrap each beet in tin foil individually and place on a baking sheet. Place in the oven and bake for approximately 60 minutes, or until a skewer goes in and comes out easily. Remove from the oven and allow to cool for 30 minutes.
Meanwhile, Cook the Dainty Basmati Rice according to package instructions.
When the beets are cool enough to handle, remove the foil and peel off the skin of the beet with a paring knife. Dice into large pieces and place in a bowl.
Place all the ingredients for the dressing into a jar with a tight fitting lid and shake to combine.
Add the chickpeas, parsley, and cooked Dainty Basmati rice into the bowl with the beets. Add the dressing and toss to combine. Season with salt and pepper to taste. Pour onto a serving platter and crumble the goats cheese on top before serving.
Cooking beets in the oven like this is clean and easy, and the skin slides off easily!
