Who doesn’t love a hearty meal to keep the cold out!
Preheat oven to 450F/230C. In a large bowl, place the chicken breast, chili powder, cumin, season with salt and pepper, and olive oil. Stir to coat the chicken evenly. Place on a lined baking sheet and place in the oven. Roast for 20 minutes, or until the chicken reads 165F/74C with an instant read thermometer.
Meanwhile, place the Dainty Royal Rice in the bowl of a rice cooker. Add in the drained black beans, corn, and diced tomatoes. Cover with 3 cups of stock or water. Cover the rice cooker and cook.
Remove the chicken and allow to rest, on the counter, for 5-10 minutes. To serve, spoon some of the rice on a plate. Slice each chicken breast into 4-5 slices and place on top. Garnish with a sprinkling of cilantro and serve with hot sauce of choice.
