Preparation

Step 1

Cook the Dainty Royal Rice according to package instructions.

Step 2

Just before the rice is done, heat a medium sauté pan over medium high heat. When hot, add in the olive oil and 1 tbsp of the butter. When the butter starts to brown and smells nutty, crack the eggs in. turn the heat to medium and allow the eggs to cook until the whites are set and the yolk is still runny, about 4-5 minutes.

Step 3

When the rice is done, add in 2 tbsp of the butter, black pepper, and ½ cup of the pecorino cheese. Stir to combine.

Step 4

To serve, spoon some of the rice into a bowl, top with a sunny side up egg. Sprinkle 1 tbsp of the grated pecorino on top and serve hot.
