Rice Cooker Tomato Herb Rice

Savoury rice, easy, simple and fast tomato rice recipe

Tomato Herb rice 2019

Ingredients

  • 2 cups / 500mL Dainty Organic Basmati
  • 2 tbsp. Tomato paste
  • 3 cups / 750mL Vegetable stock, or low sodium Chicken stock
  • 1 tsp. Olive oil
  • Salt & Pepper to taste
  • 1 cup / 20g chopped fresh herbs (Basil, Parsley, Thyme, Cilantro, Dill.. you choose the mix)
  • 2 Green Onions, sliced

Preparation

Place the rice, tomato paste and broth in your rice cooker. Cook.

When done, fluff with a fork, sprinkle the herbs and sliced green onion on top fo the rice then gently fold in. Serve.

Option: At the end, fold in 1 diced tomato or a cup of halved cherry tomatoes
